Summer season and we all love icecreams and sorbets. This year my friends bought me a ice-cream make for my birthday and it is a really amazing. I love it so much, its small and compact and it makes it so much easier to make icecream. I have tried to make it manually in the past but sometimes it can tricky because you have to remember to take it out to break the ice crystals.
So far I have made mango sorbet, berry sorbet and mocha hazelnut ice-cream.
All are very tasty but my personal favourite mango sorbet.
Mango Sorbet
1 large mango.
50g sugar add to taste
100ml of hot water
1. Skin and chop the mango
2. Puree the pieces
3. Place water and sugar into a sauce pan with the pureed mango and simmer for approximately 5 minutes
4. leave to cool overnight.
Freeze and occasionally break ice crystals or place in ice cream maker and follow instructions

Ingredients
Pork Chop
1 tbsp Soya Sauce
½ tbsp Sesame Oil
500g of fresh Blueberries
1 tbsp Berry Jam
Sugar
1 tsp water
½ tsp butter

Preparation: 15 Minutes
Cooking Time: 25 Minutes
Level: Easy

Pork Chops
1. Wash the pork chops and pat dry
2. Mix Soya Sauce with Sesame Oil and then place the pork chops into the bowl and coat and leave to marinate for 24hrs
3. When ready to cook place a little vegatable oil in a pan and pan fry both sides till ready
Blueberry sauce
1. Wash the blueberries.
2. Melt the butter in a saucepan and then coated the blueberries and add the water.
3. Keep the berries under low heat once you can see most of them have split add the jam and 2 teaspoon of sugar (you can add sugar according to taste)
4. When it starts to bubble turn the heat off and leave to cool before serving.

Salmon
Pepper
1tsp of English mustard
1tsp of wholegrain mustard
3 tsp of maple syrup
Salad

Time
Preparation: 5 Minutes
Cooking Time: 10 Minutes
Level: Easy

1. Wash the salad leaves and then let dry
2. Wash salmon pat dry and season with pepper
3. Use a little oil and pan fry salmon both sides until golden brown
4. Mix the English mustard, whole grain mustard and maple syrup together
5. Once salmon is ready place it on the bed of salad and add the mixture to the pan and heat till mixture has thicken slightly then serve with the salmon
This is my first attempt of of making Miso Cod ( I didn’t find any Black Cod so I can’t really call it Black Cod). I used Sugar, Sake, Mirin and Miso paste to marinate and reserved some for the sauce. Unfortunately the flavors was not infused into the cod so I think I will wait until the recipe is perfected for posting it up.
