Personally I like to use sweetened condensed milk because it gives you a different texture. It more sticky and gooey oppose to a jelly texture where it is clean with the cut. The ingredients are to cater the jelly type you, for the gooey type change the condensed milk to sweetened and leave out the sugar but you will need to add more milk.
1.Mix the gelatine with hot water and let it dissolve.
2.Place sugar and instant coffee into a large bowl.
3.Add milk to the coffee mix and stir until the coffee mix is almost dissolved.
4.Add condensed milk and roughly stir.
5.Stir in the gelatine and ensure that everything is dissolved and mixed in.
6.Let it cool and then refrigerate for. I like to leave it for a couple of hours till it is set.
Once set cut into small little squares. If you have little moulds you can also us instead of a dish.

The dough for this recipe is a foundation of many others. It is simple to make and fun to make.
The quantity depends on how much you want to make but the ratio is about 3:1, flour: water. Some times you may find that you may need to add a little more water. I prefer to use warm water, because I think it more chewy (yee ngun). Once the mixture is combined knead until the dough is very smooth, I suggest doing it for about 10- 20 minutes and then divide the dough to smaller pieces.
Roll the dough in to a ball and then flatten the middle where you can place you filling. You can fill your tong yuen with anything you want. You can make it savory or sweet. Personally I think sweet are nicer and I like it with chocolate, because the chocolate melts and run when you bite into it.
