Ingredients

1tsp of English mustard
1tsp of wholegrain mustard
3 tsp of maple syrup

1. Wash the salad leaves and then let dry
2. Wash salmon pat dry and season with pepper
3. Use a little oil and pan fry salmon both sides until golden brown
4. Mix the English mustard, whole grain mustard and maple syrup together
5. Once salmon is ready place it on the bed of salad and add the mixture to the pan and heat till mixture has thicken slightly then serve with the salmon
This is my first attempt of of making Miso Cod ( I didn’t find any Black Cod so I can’t really call it Black Cod). I used Sugar, Sake, Mirin and Miso paste to marinate and reserved some for the sauce. Unfortunately the flavors was not infused into the cod so I think I will wait until the recipe is perfected for posting it up.

3 Large Eggs
1/2 bowl of water
2 Chinese Soup Spoons of Sugar
2 bowls of milk.

Preparation: 5 Minutes
Cooking Time: 10 Minutes

1. Preheat the steamer.
2. Place sugar and water in a pan and heat until the sugar has been dissolved.
3. Separate the egg whites from egg yolks. For this recipe we will be only using the egg whites.

4. Whisk gently so the whites are loose but not fluffy.
5. Add the milk to the whites and then add the sugar syrup. It must be in that order otherwise the
egg whites will curdle in the heat.
6. Give it a quick whisk and pour it in to a bowl. Make sure that you do not pour the bubbles in to the
bowls because it causes an awful texture on top. For a smooth dessert no bubbles should be in the
bowl when we take it to be steamed
7. Steam for 10 minutes, or until just set.

Prawns
1 egg
Mushroom
Coriander
Soy Sauce
Sesame Oil
Won Ton Pastry
Time
Preparation: 35 Minutes
Cooking Time: 15 Minutes
Level: Easy
1. Chop the lean pork, prawns and mushroom into little pieces.
2. Chop coriander finely retaining the stalks.
3. Mix pork, prawns, and mushroom with an egg.
4. Season the mixture with soy sauce and sesame oil.
5. Place a teaspoon of the mixture on to the wonton pastry and wrap it up as above
6. Refrigerate till ready to use.
7. When you are ready to cook. Place the dumpling in a pot of water with a little oil and simmer. for 5-10 minutes
8. Drain and then make soup bases.
